Simply the fastest, best tasting, easy to make, low-calorie breakfast I’ve ever made~Try this one and you’ll be full till lunch! Better yet, go ahead and let it double as a hearty lunch recipe as well.
Combine ingredients for one serving:
1 egg plus 2 egg whites
1/4 cup canned black beans, rinsed and drained
2 Tbsp salsa
2 Tbsp shredded low-fat cheddar cheese
1 small whole wheat tortilla
Scramble eggs, beans, salsa and cheese and
fill tortilla with the egg mixture.
How easy is that! Try it!
Better yet, why not set up a burrito station for the Super Bowl? Mix a large
batch of the egg mixture in advance, cover and let them fill their own. It’s
always nice to have at least one healthy option, so might as well make it fun.
